Suginami Yabu Soba Co. (Location: Suginami Ward, Tokyo; Representative: Kaoru Tosaka), which will celebrate its 60th anniversary in 2026, will begin offering a spring-only variant of soba called "Sakura Soba Gozen" at its six branches nationwide until April 12, 2026. Soba craftsmen, who love making soba, have prepared the spring flavor.

What is Sakura-soba...
It is a seasonal soba noodle made with white buckwheat flour called "core flour," which is the core of the precious Japanese buckwheat seed, soaked with the flavor of cherry leaves, and launched. Normally, water is added to the buckwheat flour before launching, but for Sakura Soba, hot water is added to the buckwheat flour, a difficult technique. Only the most skilled soba craftsmen can launch the precious Sakura-soba, which is an annual spring-only dish. Please enjoy the sakura flavor with soba noodles at our restaurant.

The handmade sakura-soba yokan (buckwheat dumpling) made from domestic buckwheat flour is a favorite sweet treat of our customers. Please taste it with soba-yu (buckwheat noodle with salted cherry blossoms).

We are a group of soba artisans - Suginami Yabusoba Co.
We will celebrate our 60th anniversary in 2026 this year. Our founder, who trained at Kanda Yabusoba, opened the first store in Nishiogikubo, Suginami Ward, Tokyo in 1966, and since then, we have stubbornly maintained the traditional Yabusoba buckwheat noodle making technique.
The soba noodles are made using only the most precious domestic buckwheat flour from the Shirakami Mountains in Aomori Prefecture and Hitachi-Aki Soba in Ibaraki Prefecture, and are launched in natural lacquered wooden bowls at each restaurant.
Tempura is fried using only thick white light sesame oil in a tempura pot and chopsticks (no fryer or oil other than sesame oil is used), and soba sauce is prepared separately for cold and warm soba. The hot soba is made from buckwheat and mackerel, and is prepared several times a day for freshness and heat.
We do not have a central kitchen, but rather each restaurant prepares its own soba from buckwheat flour and soup stock to provide "freshly made", "freshly boiled", and "freshly prepared" soba to our customers. We currently have 6 soba stores across Japan, all of which are long-established, but we strive to provide "delicious soba and barai with a pleasant atmosphere" by creating sophisticated spaces.
