Tsukishiro Yaki Saba Sushi (Nanjo City, Okinawa Prefecture), a restaurant specializing in Yaki Saba Sushi that opened in April 2025, is celebrating its first anniversary.
The restaurant specializes in takeout, serving only one item of Yaki Saba Sushi.
The average daily quantity is limited to 15 pieces, and each piece is prepared by hand.

About the products
The roots of the restaurant lie in the "Saba Kaido" (mackerel road) that connects Kyoto and Fukui.
The owner, who had been making "saba-zushi" for many years in Shiga Prefecture, moved to Okinawa, saw the potential of Okinawa's saba food culture, and began to take on the challenge of making it here.
The rice used is Koshihikari produced in Omi, Shiga Prefecture. The rice is polished at home and combined with vinegar imported from Fukui. The aroma of the baked mackerel and the softness of the vinegared rice.
The food culture of the north is expanding to the south.
One year anniversary
On April 5, we plan to offer a gift as a token of our appreciation. (Limited quantity)
The new "Saba Kaido" connects Shiga and Okinawa.
