Refreshingly chilled freshly fried pork cutlet
This year marks the 24th anniversary of our special chilled katsu-don, with cumulative sales topping 240,000 servings through last year. We are proud to offer this limited edition product to enjoy the summer season with "cold, delicious, and beautiful".
What is "Special Cold Katsu-don"?
This is a special summer-only menu featuring carefully deep-fried pork cutlet, seasonal summer vegetables (cucumber, okra, grated yam), and refreshing condiments (myoga, green shiso, pickled plums, wasabi) on a bed of cold rice topped with a generous amount of cold special soup stock. Salad and pickles are included.
1. using freshly deep-fried pork cutlets with the utmost care
Carefully selected Japanese brand pork is cut into luxuriously thick slices and deep-fried slowly and carefully in low-temperature corn salad oil. You can enjoy the original flavor of the pork and the crispy texture of the batter. 2.
2. cold special soup stock
The special cold dashi broth is carefully prepared using rich bonito flakes from Makurazaki, Kagoshima Prefecture, kelp from Hokkaido, and dried sardines from Kujukuri, Chiba Prefecture, and is served with crushed ice.
3. carefully selected seasonings and condiments
The soy sauce is a special soy sauce made by Maruyama Miso Soy Sauce Brewery, which has a history of over 100 years in Azumino, Nagano Prefecture. It is a perfect blend of dark and light soy sauces. For the condiment neri ume, we use a blend of two types of additive-free Nanko ume from Minabe, Wakayama Prefecture, which adds a rich flavor and a refreshing sourness.
The soup stock, as well as all of the meats and vegetables, are prepared using a non-chemical preparation method. Our goal is to create dishes that are delicious, healthy, and beautiful through food.
